Cajun Smoked Mozzarella & Parmesan Pasta Salad

The perfect dish to bring to the next potluck or summer barbecue! This smoked mozzarella pasta salad was requested from a customer based off a popular Whole Foods recipe. It's a creamy parmesan dressing with soft mozzarella then we added our KBS Ragin' Cajun seasoning for a bit of a kick with cayenne, chili pepper, sea salt, and more added to the mix. 

Serves: 4

  • KBS Ragin Cajun
  • 1/2 cup parmesan cheese grated
  • 1/4 cup parsley chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons cup white wine vinegar
  • 2 cloves garlic minced
  • 1/2 pound penne pasta
  • 1 cups baby spinach packed, washed and stemmed
  • 1 small roasted red bell pepper diced
  • 1/2 pound smoked mozzarella cheese diced
  • Parlsey


1.) To make dressing combine parmesan cheese, mayo, vinegar, garlic, and KBS Ragin’ Cajun spice blend in a small bowl. Mix well by hand or for an even creamier consistency add to a food processor.

2.) To prepare pasta salad add pasta to boiling water and cook until is is all dente. Drain pasta and run under cold water until pasta is room temperature.

3.) Combine pasta with dressing then add the smoked mozzarella, spinach, and roasted red peppers. Top with more KBS Ragin’ Cajun seasoning and garnish with parsley.
