Serves: 4-6.
Ingredients:
- 2 cups red quinoa.
- 4 cups water.
- 2 sweet peppers, diced.
- 1 cucumber, diced.
- 1 red onion, diced.
- KBS Sunny Island Blend - to taste.
- 1 can chickpeas.
- 1/2 cup olive oil.
- 1 cup goat cheese, crumbled.
Directions:
1.) Bring water to a boil and add red quinoa. Reduce heat, cover and let simmer for 15-18 minutes. Add to large bowl and let chill in fridge.
2.) Add onion, peppers, chickpeas, and cucumber in a large bowl. Add chilled quinoa, goat cheese, oil and KBS Sunny Island Blend. Stir well then chill.
