- 4 cups Minute cooked rice.
- 1/4 cup of Parmesan cheese.
- 2 tablespoons diced garlic.
- 1 cup mozzarella.
- 4 eggs.
- 1 cup of breadcrumbs.
- Oil for frying.
- Spicy Mayo for dipping.
- Season to taste with Kissed by the Sun Ragin' Cajun Seasoning.
1.) Add boiling water to Minute rice for instructed amount of time, or until cooked - about 5 minutes.
2.) Add cooked rice to a large bowl with 2 eggs, garlic, 1/2 cup of breadcrumbs, parmesan cheese, shredded mozzarella, and several dashes of Kissed by the Sun Ragin' Cajun Seasoning - more or less depending on your heat tolerance. Form into medium sized balls.
3.) Beat 2 eggs into separate bowl, and dip rice balls into yolky coating. Coat second layer with remaining breadcrumbs.
4.) Heat oil in large enough Saucepan to submerge balls in oil. Add balls and fry until a golden brown - about 6 - 8 minutes depending on size. Serve hot with spicy mayo and Kissed by the Sun Ragin' Cajun sprinkles.
