History: Traditionally, stuffed mushrooms are known to be an Italian-American meal. Stuffed mushrooms are usually made with parmesan cheese, herbs and breadcrumbs. However, stuffed mushrooms dates all the way back to the 19th century in France.
Vegan & Vegetarian Alternative: There are an assortment of blue cheese (or bleu cheese) dressing brands to choose from. High Omega Vegan Bleu Cheese Dressing by Follow Your Heart is a good example. However, there is nothing better than making homemade dairy-free dressing. So, grab a bowl, place 1/4 block of crumbled tofu (firm) and set aside. Crumble the tofu up with a fork. Mix or blend in 1 cup of vegan mayo (Veganaise), 1 raw garlic clove (minced), ¼ tablespoon of tahini (sesame seed paste) and a ½ teaspoon of lemon juice, ½ teaspoon of apple cider vinegar and a dash of KBS Black Pepper & Herbs. The blender is a good tool to have handy – it will give the sauce a smooth consistency. Once complete, pour over the crumbled tofu and lightly mix with a spoon. Sprinkle a dash of parsley on top and place in the refrigerator for approx. 35-45 minutes before serving.

Ingredients for Blue Cheese Stuffed Mushroom Recipe:
-¼ pound of Cremini mushrooms
-¼ cup chopped onion, ½ cup of onion
-½ clove garlic, finely chopped- ½ cup blue cheese dressing
- Season to taste with our low sodium Black Pepper & Herbs blend
Directions for Blue Cheese Stuffed Mushroom Recipe:
1.) Remove stems from mushrooms and chop stems fine.
2.) Put stems, chopped onion, and garlic in a frying pan and sauté in small amount butter or olive oil. Cook until onion is soft, then separate onions and mushrooms.
3.) Stuff mushroom caps with blue cheese. Shake our Black Pepper & Herbs all over your stuffed mushrooms and top with onions. Bake on a cookie sheet at 375F degrees for 10 minutes.
