Shrimp Couscous Pineapple Bowl | Kissed by the Sun
With Summer right around the corner it's time to start putting together a grocery list for awesome outdoor meals. This KBS original, made with our salt free Lemon, Lime, & Orange Peel Blend, is not only light and refreshing but extremely unique. Put boring dry salads to shame at the next picnic or pot luck with this one of kind dish!
Cook Time: 25 Minutes
Serves: 1 to 2
Ingredients for Shrimp Couscous Pineapple Salad:
- 1⁄2 cup diced red pepper
- 1⁄2 cup diced onions
- 1 pineapple
- 1 avocado
- 6 Jumbo Shrimp
- 1 box Couscous
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
Directions for Shrimp Couscous Pineapple Salad:
1.) Hollow out pineapple after cutting in half down the middle, leaving skin on. Scoop out center and dice that pineapple into small chunks.
2.) Sautee shrimp in medium saucepan for 3 minutes on each side in oil and our Lemon, Lime, & Orange Peel.
3.) Cook couscous according to packaged instructions adding vegetables and KBS Lemon, Lime,& Orange Peel Blend while cooking.
4.) Combine couscous mix, shrimp, and garnish with avocado & vegetables. Let chill or serve hot.
